2 tbs extra virgin olive oil
4-8 cloves garlic
1 28 oz can good tomato
Salt and pepper to taste
Basil (optional but is it really?)
Heat oil over medium-low heat. You want it hot and shimmering but not smoking.
Mince garlic. You may want to mince the garlic before you heat the oil. This is an opportunity to multi task but if you are not quick with the garlic the oil can get too hot. This means that when you add the garlic to the oil, it will burn quickly. Burned garlic is bad.
Add garlic to hot oil.
Toast the garlic, stirring constantly until light brown and fragrant.
At this point add the can of good tomatoes.*
Simmer until the oil at the edges begins to turn red. 15 -30 minutes.
Salt and pepper to taste
Turn off heat and stir in torn or chiffonaded basil.
