Ingredients
1 Tablespoon oil (i like virgin coconut but a neutral oil works great too)
2 cans Black eyed peas
1/2 cup salsa or pico de gallo
2 cups broth (your preference)
Instructions
Add oil to pan on medium high heat
Add salsa or pico before it gets hot. If you wait, the water in the salsa will make the oil pop and spit.
As it starts to sizzle, stir for 3-4 minutes.
Add drained Black eyed peas. Cook and stir for 3-4 minutes.
Add broth, bring to a simmer and cook until reduced and peas are tender.
