Best, Fast, Easy- Veggie Ceviche

Ingredients

  • 1 can hominy, strained

  • 1 can chickpea, strained 

  • 1/2 cup pico

  • 1/2 cup mango kiwi relish

  • 1/2 cup diced red pepper

  • 1/2 cup diced cucumber 

  • 1 lemon

  • 2 limes

  • 2 tbs rice vinegar 

  • 1 tsp white miso

  • 1 tsp soy sauce

  • 1 tbs salt, more to taste 

  • 1 tsp pepper

Instructions

  1. Bring a medium sauce pot to a boil and add 1 tsp of salt.

  2. Boil hominy and chick peas for 10 minutes to soften

  3. Strain and allow to cool

  4. Combine lemon, lime, miso, vinegar, soy sauce, 1tbs salt and pepper.  Set aside

  5. Add hominy and chick peas to a large bowl.

  6. Fold in pico, relish, red pepper, cucumber

  7. Add vinegar mixture and stir to coat

  8. Cover and refrigerate for at least an hour or overnight. Stir occasionally.
