Meatloaf is like a giant meatball. My mom made meatloaf. I liked it but it was my brother’s favorite so I was never excited to eat it. Siblings. Then when we were in the hospital for our first kid, I had meatloaf for the first time in a very long while and it was great. Seriously, he hospital meatloaf was awesome. I talked about it for years until we had our second kid. Any how, I started making meatloaf after that. Enjoy.
What is cool about meatloaf is that it can be flavored however you like (Mexican, Asian, Indian, Greek.) And served with different sides.
Ingredients
3 pounds ground meat (I like beef, but turkey, pork or other combinations all work.
2 cups panko bread crumbs
3 eggs
1 tbs salt
1 tsp black pepper
4 garlic cloves, minced
2 tbs butter
2 celery
1 large onion
1 bell pepper (any color)
½ tsp worcestershire sauce
The Glaze
¼ cup ketchup (I like )
2 tbs honey (Maple syrup is good too)
1 tsp Worcesershire suace
Instructions
Preheat oven to 350.
Put on some rubber kitchen gloves.
Heat butter in a pan over medium low
Add mixed garlic and cook until fragrant then remove from heat and allow to cool.
Cut celery, onion, and bell pepper into 2 inch pieces and add to a food processor. Chop until fine, 4-6 pulses. About an ⅛ of an inch.
Add meat, bread crumbs, eggs, worcestershire, veggie mixture, salt, pepper, and butter and garlic to a large mixing bowl.
Remember those gloves
Mix thoroughly.
Add to bread pan and smooth the top with a spatula
Smear glaze all over the top when the internal temp reaches 100 degrees
Bake until 165 degrees (30-45 minutes. Time will depend on the size of the pan and your oven. CHECK THE TEMPERATURE).
Serve with roasted veggies and mashed potatoes. Or whatever you want.
