Best, Fast, Easy- Smashed Potato: Nacho Style

Ingredients

  • 2 cups shredded colby jack cheese

  • 1 can of refried or black beans

  • 1 cup pickled Jalapeno

  • Optional:

    • 1 lb taco meat or grilled chicken 

    • 1 cup sour cream

    • 1 cup guacamole

    • 1 cup pico or other salsa

    • 1 Cup Black olives

Instructions

  1. Remove crispy potatoes from the oven

  2. Add a spoon full of beans and a pinch of cheese to each potato.

  3. On top of the cheese place a 1-2 pickled jalapenos

  4. Return to oven for 5 minutes or until cheese is melted

  5. Pull from oven and serve with whatever nacho fixing you like.  Just remember serve cold ingredients on the side add after the potatoes come out of the oven.

  1. Alternatives

    • Add meat with or in place of beans under cheese

    • Pile potatoes and create a glorious mountain and put it back in until melted.  Just make sure you layer in the cheese and other warm ingredients.
