This is a one pot solution to Mac and Cheese.  While many recipes call for creating a separate cheese sauce, this one creates the sauce right in the pot.  


Ingredients

  • 1 lb pasta, I like the classic elbow macaroni or cavatappi but choose your favorite

  • 8 oz shredded mild cheddar 

  • 8 oz s dubliner cheddar 

  • 4 oz parmesan

  • 8 oz butter, cut in to 6-8 pieces

  • 2 Cups whole milk

  • 1 tbs salt plus more to taste

  • Black pepper to taste

Instructions

  1. Bring 4 quarts of water to a boil and add 1 tbs salt

  2. Add noodles and stir frequently for the first minute and occasionally there after

  3. Boil noodles until now quiet al dente.

  4. Put milk into microwave for 1 minute or heat over low on stove

  5. Reserve 1 cup of pasta water and drain the rest

  6. Return pasta to the how pot over low heat

  7. Add butter and stir to melt

  8. Once pasta is coated add pasta water and continue to stir

  9. Add warm milk and continue to stir until it begins to thicken

  10. Remove from heat (Cheese will stick to your pot real bad.)

  11. Slowly stir in cheese by sprinkling a handful of cheese over the top of the noodles and folding it in.

  12. Repeat the process until all the cheese in melted in the pot.

  13. Add salt and pepper to taste

  14. Optional: Transfer to a casserole dish, coat in bread crumbs and bake at 350 until brown and crispy.
