Best, Fast, Easy- Simple Chicken Soup

I love chicken soup.  It is one of my all time favorite foods/  It wasn’t until I started making it.  


Ingredients

  • 1 tbs cooking oil

  • 1 large yellow onion, diced (any onion works but yellow is best)

  • 3-4 medium carrots, peeled and cut into ¼ inch rounds(You can use less.  My wife likes carrots)

  • 3 celery stalks, ¼ slices

  • 2 cups shredded chicken (beast or dark based on preference.)

  • 2 cloves garlic (optional)

  • 1 package fresh herbs poultry blend ( rosemary, thyme, sage)

    • for dried herbs use a tsp of each.

  • 1/2 cup italian parsley, minced

  • 3 quarts chicken basic broth (or use a pre flavored one)

  • Salt and pepper to taste

Instructions

  1. Add oil to a heavy bottomed pot and heat on medium.

  2. Add veggies and some salt and pepper to the pot.  Cook until soft, 5-7 minutes, stirring frequently.  

  3. Remove leaves from herb stems and mince.  

  4. Stir in herb and half the parsley. Cook 1 minute.  

  5. Add chicken broth. 

  6. Bring to a simmer for 15-20 minute.

  7. Add shredded chicken and remaining parsley, simmer for 10 minutes

  8. Add salt and pepper to taste.
