Best, Fast, Easy- Broccoli and Sausage Pasta

Ingredients

  • 3 Tbs extra virgin olive oil

  • 2 tbs unsalted butter

  • 1 package precooked italian sausage, cut into ¼ inch rounds

    • Any type thaat suits your preference

      • I like the wholefoods chicken sausage either Italian or Mushroom Parmesan

  • 4-8 cloves of garlic, Minced (To your taste)

  • 2 Medium heads of broccoli, broken down into florets

  • ½ cup dry white wine

  • 1 lb of fusili or penne

  • ½ cup or more good shredded parmesan 

  • Salt and pepper to taste

Instructions

  1. Bring 4 quart of water to a boil.  SAlt until it tastes like the ocean.

  2. Heat oil and butter in a large bottomed pan over medium heat. 

  3. Stir pasta into salted water.  Stir frequently for the first minute and occasionally after that.  It will usually take around 12 minutes but taste as you go.  Reserve a ¼ cup of pasta water.  Drain when it reaches desired doneness.  

  4. Once butter is melted and bubbling, add sausage to the pan spread evenly and flat. 

  5. Brown on each side for 2 minutes

  6. Add garlic cook for 1 minute, stirring frequently

  7. Add wine and salt and pepper and bring to a simmer.

  8. Stir in broccoli and cover for 7 minutes.  

  9. Remove top, add in pasta water, and cook another 2-3 minutes.  

  10. Combine pasta and sauce in the big pasta pot (more space) and stir until it thickens. 

  11. Add grated parm and combine

  12. Serve immediately
