Best, Fast, Easy- Broccoli, Cheese and Potato Soup

Ingredients

  • 3 cups mashed potatoes

  • 2 tbs neutral oil

  • 1 medium onion, diced

  • 2 medium carrots, diced

  • 2 celery stalks, sliced

  • 3 cups spoon sized broccoli florets, steamed

  • 2 quarts chicken or vegetable broth

  • 3 sprigs thyme, leaves removed

  • 2 bay leaves

  • Salt and pepper. 

Instructions

  1. Heat oil over medium in a large soup pot

  2. Add onion, carrot, and celery until vegetable soften and onion begins to become translucent. Add a pinch of salt and a few dashes of pepper

  3. Add steamed broccoli, cook 2 minutes stirring frequently

  4. Add thyme and bay leaves, cook 1 minute while stirring

  5. Add broth and bring to a simmer for 15.  Season with salt and pepper

  6. Stir mashed potatoes on large spoonfuls at a time until evenly incorporated.  

  7. Cook to desired consistency

  8. Serve with breads
