Ingredients
3 cups mashed potatoes
2 tbs neutral oil
1 medium onion, diced
2 medium carrots, diced
2 celery stalks, sliced
3 cups spoon sized broccoli florets, steamed
2 quarts chicken or vegetable broth
3 sprigs thyme, leaves removed
2 bay leaves
Salt and pepper.
Instructions
Heat oil over medium in a large soup pot
Add onion, carrot, and celery until vegetable soften and onion begins to become translucent. Add a pinch of salt and a few dashes of pepper
Add steamed broccoli, cook 2 minutes stirring frequently
Add thyme and bay leaves, cook 1 minute while stirring
Add broth and bring to a simmer for 15. Season with salt and pepper
Stir mashed potatoes on large spoonfuls at a time until evenly incorporated.
Cook to desired consistency
