Ingredients
2-3 lbs boiled small to medium, yellow, red, creamer or fingerling potatoes
2 Tbs neutral oil
Salt and pepper to taste and or other seasoning
Instructions
Pre-heat oven to 400 degrees
Remove potatoes from the water and allow to dry on a baking rack.
When dry, add to a large bowl with oil and seasoning and coat completely
Arrange on a sheet pan so that the potatoes don’t touch.
Bake for 15-20 minutes until skins are papery and potatoes are fork tender.
