Best, Fast, Easy- Roasted Potatoes

Ingredients

  • 2-3 lbs boiled small to medium, yellow, red, creamer or fingerling potatoes

  • 2 Tbs neutral oil

  • Salt and pepper to taste and or other seasoning

Instructions

  1. Pre-heat oven to 400 degrees

  2. Remove potatoes from the water and allow to dry on a baking rack.

  3. When dry, add to a large bowl with oil and seasoning and coat completely

  4. Arrange on a sheet pan so that the potatoes don’t touch.

  5. Bake for 15-20 minutes until skins are papery and potatoes are fork tender.
