Ingredients
4 boiled medium to large, whole russet potatoes
2 Tbs neutral oil
Salt and pepper to taste and or other seasoning
Instructions
Pre-heat oven to 400 degrees
Remove potatoes from the water and allow to dry on a baking rack.
When dry, add to a large bowl with oil and seasoning and coat completely
Use a fork to poke multiple holes on all around the potato.
Arrange on a baking rack on a sheet pan so that the potatoes don’t touch.
Bake for 20 minutes until skins are papery and potatoes are fork tender.
