Ingredients

  • 4  boiled medium to large, whole russet potatoes

  • 2 Tbs neutral oil

  • Salt and pepper to taste and or other seasoning

Instructions

  1. Pre-heat oven to 400 degrees

  2. Remove potatoes from the water and allow to dry on a baking rack.

  3. When dry, add to a large bowl with oil and seasoning and coat completely

  4. Use a fork to poke multiple holes on all around the potato.

  5. Arrange on a baking rack on a sheet pan so that the potatoes don’t touch.

  6. Bake for 20 minutes until skins are papery and potatoes are fork tender.
