1 Lb Salmon

2 cups of rice

1 bunch of broccoli.

Bring a pot of water to a boil. I use 4 qts in an 8 qt. pot.

Pre heat the grill

For this meal I steam my broccoli over the cooking rice. I break my broccoli up right into a pyrex bowl (Link in products) . I used to cut up the broccoli but it made a mess and I really didn’t feel like I was washing it very well. Now, i set a bowl next to the sink and break it into florets with my hands as I rinse it. I may divide up the larger florets with a knife after but, usually I can do it with out a knife.

Add the rice and stir, as described above.

I have cooling racks (linked in products section) for baked goods. Set one of these over the bowl of broccoli. Put on oven mitts. Steam is hot and will burn you. I flip the broccoli bowl with rack on the bottom and put on top of the boiling rice. I like to steam it for 7-8 minutes but choose your doneness.

Put the salmon on the grill now.

Now, you can season the steamed rice and serve it. Or season it, coat it in oil and put it under the broiler for 2-4 minutes or put it on the grill.

Save the left over rice for tomorrow.
